Enough about boobs, and poop, and sleep. At least for one post :)
Anyway, I've realized I'm in a major food rut. I've not had a ton of time to think about new things to cook for dinner, so I've fallen back on the same few things I can make with my eyes closed: tacos (ground beef/turkey/chicken or black bean), stir-fry, pot pie, pan-seared meat (chicken breast/pork chop/steak) with veg and starch, pasta with variations on tomato sauce. Maybe a mac-n-cheese here and there.
So I need inspiration. What have you made recently that's good? And fairly easy or can be prepped ahead of time (like when someone critter-like is napping)? My only food no-no is fish, which I'm not a huge fan of cooking at home. And I don't do the crock-pot thing. Links to recipes or descriptions in the comments are welcome.

well ... how adventurous are you? I make a lot of soups (good for make-ahead on the weekend), but there are also one dish dinners I like (curries, korma, frittatas, etc.). Maybe I should tag some of my posts "easy" or "make-ahead" ... :)
ReplyDeleteTo be honest, all of that sounds delicious. You can come cook for us anytime! Sorry, I know not the advice you were looking for. But just want to give you kudos for cooking at all.
ReplyDeleteSoup and grilled sandwiches/paninis! Genius for cooking in advance -- just leave the actual heating of the sandwiches until you're ready to eat. Soups can also freeze really well if you have leftovers.
ReplyDeleteCrepes with miscellaneous veggie fillings (good use of leftover veggies, otherwise, spinach and feta, mushrooms, zucchini, etc.) One with applesauce or lingonberry preserves or fruit and nutella for dessert.
Omlettes, too, are often a part of dinner in these parts. With a side salad and some crusty bread or roasted potatoes.
I'm with you...we need to expand our menu at home, too. I'm bored to death with the same old stuff. I hope you get some good comments on this because I'll be printing them out, too!

ReplyDeleteHere's an idea from nutritionist J.J. Virgin:
‘GO-TO’ FIVE MINUTE MEAL:
In sauce pan:
Add regular olive oil (not extra virgin) or coconut oil
Turn on to medium – high heat
Add peppers and onions, artichoke hearts and sliced mushrooms and any other leftover
veggies you have (roasted Brussels sprouts, fresh spinach, chopped green chilis for
some zip, etc). Add cooked quinoa, black beans or lentils for your high fiber starchy
carb and your choice of cooked leftover protein. Sauté til heated through.
If you want a little more flavor you can add Thai Red Curry Sauce, Dijon mustard or
your favorite herb blend.
Serve!
I just made this last evening -- it's very easy and really doesn't take much time. And is actually pretty healthy, which is a nice change.

I also am a big stir fry fan -- pretty much whatever veggies I have and then whatever protein is around (we use shrimp and chicken equally often. I just use some concoction of ginger, mirin, soy, chicken broth and garlic.
Lastly, I made a recipe for hunan orange roast pork loin (google the recipe -- the link isn't working) and it was super easy and can be made ahead.
I am at the point where my groceries are being delivered, along with one or two easy to cook options (like rotisserie chicken and stir fry "kits". Becayse the little man here is not really sticking to bedtime and I need to eat before 10pm!
